Happy Birthday Nikki!

They say that the 40's are the new 20's. It does not matter if we are single, married, mother, or grandmother; age is all in the mind. Your birthday is a celebration of you. Celebrate & enjoy!

I started this cake by making homemade marshmallow fondant a few days prior to making the actual cake. I made some of it into gum paste and colored it with gel food coloring.      

Tap-it letter cutters were used to make the appropriate letters

I brushed the letters with a food paintbrush dipped in vegetable shortening to take off all of the powdered sugar. The letters can be used right away, or you can let them set to stiffen up so they are easier to handle.

Then I created handmade gumpaste roses in two colors

The green star shapes are the calyx's for the back of the roses.
They are glued into place with edible glue.

 
 This is a 10" two layer Lemon flavored cake using a fresh squeezed lemon & lemon zest. It has a strawberry chunk cream cheese filling with a layer of lemon curd for that additional lemony flavor. I make a icing damn to keep in the filling, so it does not all ooze out down the sides (That could get very messy, LOL).

Then comes the fun part; Icing & decorating the cake.
